Beer-Battered Trout recipe

It’s a spinoff of the English “fish and chips,” but with a bit more pizzazz. Use a zesty spice mix for the batter, and serve this with your fave dipping sauce and crunchy slaw.

Ingredients:

1/3 to 1 cup vegetable oil, as needed, for frying
1 ½ cups all-purpose flour
1 teaspoon baking powder
1 teaspoon sea salt
¼ teaspoon cayenne pepper
1 cup light beer
4 (6-ounce) trout fillets
1 tablespoon Cajun or grill seasoning

Directions:

1) Heat oil in a large, heavy skillet over medium-high.

2) Meanwhile, combine flour, baking powder, salt, and pepper in a large bowl. Add beer and stir until well mixed. Season trout on both sides with Cajun seasoning. Dip into beer batter to fully coat.

3) Carefully place trout into hot oil. Cook until golden on both sides, turning once, about 8 minutes total. Remove from skillet, allow to cool slightly, and serve.
